胃蛋白酶能够催化血红蛋白水解生成酪氨酸，产物在275 nm处具有特征吸收峰，通过吸光值变化即可表征胃蛋白酶的活性。

• 信号响应： 递增型

①若A测定大于1.2，建议将粗酶液适当稀释后再进行测定，计算时相应修改；
