γ-谷氨酰转肽酶能够催化谷氨酰对硝基苯胺中γ-谷氨酰基转移至N-甘氨酰甘氨酸，生成对硝基苯胺，产物在405 nm处具有特征吸收峰，通过吸光值的增加速率即可表征γ-谷氨酰转肽酶的活性。
